
1 c light brown sugar
1/2 c flour
1 c pecan pieces
2/3 c butter (softened)
2 eggs, beaten
Mini muffin tins work best.
Preheat oven to 350 degrees. Spray mini muffin tins with cooking spray (Bakers Choice that has flour and oil in an aerosol can works very well).
Stir together sugar, flour, pecans. In a separate bowl, beat eggs and butter until smooth then fold into the dry ingredients just to moisten (do not over mix).
Spoon into mini muffin cups. Bake for 14 min. Cool tin on wire rack for 10 min. Remove muffins and store in a covered container. Recipe makes 24. Add in orange zest and/or dried cranberries. Walnuts can be substituted as well.
