
Roast Broccoli Cheese Soup
½ cup of roast broccoli
1 TBSP butter
¾ TBSP flour
1 cup milk (I use whole milk, but anything from cream to low-fat works, it’s just adjusting flour amount to create thickness you like)
½ cup of Velveeta (this stuff lasts forever!), cubed
Melt butter in small pot. Stir or shake together flour and milk and add to melted butter. Stir constantly, this should thicken slowly, add cubed Velveeta. Boiling this mixture could make it thicken too fast and get lumpy. Add roast broccoli. To loosen this soup you can add a little water or stock. If you like it cheesier add more Velveeta. This soup should not take much longer than 15 minutes using pre-roasted broccoli.
Garnish with shredded cheese you have on hand or add baked bacon bits. Serve with crackers or buttered bread and enjoy! Don’t forget to add things you love and make it your own.
Don't limit your cheese soup to just broccoli, try it all!! Individually or collectively -- cheese is good on everything!
