Don't be afraid to experiment - a favorite of mine is roast radishes! Here, I have used a pork loin roast, red cabbage and green beans.
You will become an expert at this once you start trying different combinations of veggies or veggies & meat. I always try new things (some are bigger hits than others, but you never know till you try) You can toss in some apple or pear slices to throw in a sweet change of pace. Make it your own. You can take the same pan and roast on the grill.
